Heath requested a camping trip for Father's Day weekend this year so we went to Lake Mineral Wells State Park for one night. This was Carter's 3rd time camping (but the first that he remembers) and Hayden's 1st time. Yes, it just happened to be one of the hottest Junes in Texas on record, but we had a good time nonetheless. We got to the site around 7pm; set up camp; made a delicious beef strogonoff in the dutch oven; and then roasted marshmallows around the campfire. The kids loved toodeling around the campsite and sleeping in the tent. After an early breakfast, we let the kids play in the lake for awhile before packing up. We had planned to make lunch on the campfire, but overnight a racoon opened our ice chest and ate our cheese! That and the heat made us decide to come home for lunch instead.

So cute!!
What a fun Father's Day Trip! I am very impressed with the Beef Strogonoff. I would be lucky to remember to pack turkey sandwiches.
